This dish is more about assembling than cooking. All you need to impress your short-notice guests are a couple of nice plump pears, a little honey, a few sticks of cinnamon, a dash of raspberry jam, a wee bit of rose powder mixed with ground cinnamon and a sprig of kaffir lime leaves. I named this dish Pear Rosalina but you can call it by any other. What's in a name, after all?
In a serving plate, spoon in 2bsp honey (diluted beforehand with 1 tsp warm water). Thinly slice your pears and arrange them carefully on the honeyed salver. Brush lightly with raspberry jam. Arrange a few candied bite-size pears on top. Finish by sprinkling rose powder mixed with ground cinnamon. Garnish with the lime sprig and a couple of cinnamon sticks.
