Breakfast Brouhaha

Coffee

Yes, of course!

To Priestly's practical list, I'd love to add other delights – provided, I'm not the one preparing them. devil Although I pretty much live for and by coffee (at all times – earthly or otherwise), I am not a whizbang frontrunner of the neighborhood breakfast club. Instead, I am happy to be just sipping at my morning brew – often, mugs of it! Just a cue: if you invite me over for coffee, please do skip the china.

As for the bacon and eggs I don't really mind – especially the eggs. I often end up making a fat cheesy omelette for breakfast, very much like the Spanish tortilla de patatas – only, my Spanish Omelettes come without the mandatory potatoes wink

Here's a sample:

Spanish Omelette

For this recipe, I used 4 eggs (for 2 people); whisking them together with a tablespoon of warm full-cream milk & salt to taste until pale and frothy. Next, I lightly (literally so, as you don't want browned veggies in your omelette) fried the diced veggies (carrot, bell pepper & onion) in some butter over a low flame. When the veggies were 3/4th done, I poured in the beaten eggs covering the pan with a well-fitting lid and keeping the flame low all along. After about 30 seconds, I checked my omelette for doneness (if the heart feels soft yet firm, your job's done). I finished by topping the omelette with coarsely grated mozzarella, a dash of dried oregano, freshly-ground peppercorns and a sprinkling of finely-chopped scallions. You may go on to add thinly sliced pepperoni, sun-dried tomatoes, cooked sausages (coarsely chopped)…just about anything that happens to catch your fancy.

I'm not done yet…

 

Cereals (although, I wholeheartedly dislike them) are a staple. Also, milk (I fancy both my husband & I were cats in our past lives!!). Add to that a bowl of fruits, may be.
