This one's my favorite. Also the husband's. No wonder it tops my most cooked list
This is also one of the simplest recipes I've tried so far – perfect for a romantic Friday-night supper. Ditto for a nice patio luncheon with family and friends.
First, I go find the freshest tomatoes – homegrown of course! I love growing tomatoes so much so that I sometimes fancy myself as a full-time tomato farmer!! I am at my most energetic (also the happiest) while planting tomato seedlings, tending to the plants, harvesting the ripe fruits and of couse cooking, photographing and eating them. But I just realized this post is supposed to be more about pasta than tomato. Nevermind…
I cook the pasta in boiling water (salted) until al dente (about 10 minutes) and then add a dollop of butter to keep the penne from sticking onto each other – keeping them warm all the while. Next, I heat some oil in a pan and shallow fry the sausages. When they are almost done, I add in the fried pieces of chicken and the mixed spices (see Note below). It's now time to stir fry for about a minute over moderate heat before whisking in the tomato puree and the ketchup. I cook for a good 2 minutes and then add the penne in seasoning with salt and oregano. I finish with a lovely garnish of shredded mozzarella.

Here's a list of the ingredients:
a. 200 grams Penne (if cooking for two)
b. 4 cloves of garlic
c. 2 whole cayenne peppers
d. 6-7 peppercorns
e. Half a cup shredded mozzarella cheese
f. 2 medium size tomatoes freshly pureed
g. 2 tbsp thick tomato ketchup
h. 100 gm butter
i. olive oil (or vegetable oil if you are not particularly fond of olive oil like me)
j. 8 chicken sausages, roughly chopped
k. 100 gm chicken cut and fried into bite-size pieces
l. Salt to taste
m. a fat pinch of dried oregano
Note: In a blender, grind b, c & d into a smooth paste.
